Sockeye salmon is exceptionally rich in omega-3 fatty acids, specifically EPA and DHA, which are crucial for maintaining heart health by reducing inflammation, lowering blood pressure, and decreasing risk factors for disease. For three intense weeks in early spring, our team carefully taps the majestic Alaska Birch trees (Betula neoalaskana) to collect the precious sap. We then transform it into the unique and flavorful Alaska birch syrup that you’ll find in every bottle.
It’s a labor of love – with 110 gallons of birch sap required to create just one gallon of birch syrup, but we believe it’s worth every drop, as it captures the essence of Alaska in its taste.
Birch syrup has a beautifully complex taste that pairs well with savory foods as well as sweet. It has a much different flavor than maple but can be used similarly. We enjoy a splash of it mixed with unsweetened soda water as a “healthy soda.” It can also be used as a drizzle or marinade for fish and veggies or used straight on pancakes or waffles.
